Chocolate Chip Cookies

Crisp edges, soft middles. The cold Irish butter is what makes them.

Ingredients

  • 2¼ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 brick grassfed Irish butter, cold
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate morsels (one 12 oz package)

    Get set.

    Preheat the oven to 375°. Whisk the flour, baking soda, and salt together in a small bowl.

    Cream the butter.

    Cut the cold butter into cubes, then beat it with both sugars and the vanilla in a large bowl until creamy.

    Add the eggs.

    Beat in the eggs one at a time, mixing well after each.

    Bring it together.

    Gradually beat in the flour mixture, just until no dry streaks remain.

    Stir in the chocolate.

    Fold in the morsels with a wooden spoon, along with any small helpers standing by.

    Bake.

    Drop rounded tablespoons onto ungreased baking sheets and bake 9 to 11 minutes, until golden brown. Let them sit on the sheet for 2 minutes, then move to wire racks to cool.

A few notes.

  • One brick of Irish butter is 8 ounces, the same as two regular sticks. The grassfed butter is what makes these taste richer than the ones on the back of the bag.
  • Pull them when the centers still look a touch underdone. They finish setting on the hot sheet.
  • The dough freezes beautifully. Scoop it into balls first and bake straight from frozen, a minute or two longer.
